To get started with the recipe, first, wash and clean the chicken well. In a mixing bowl, add the curd, turmeric, and lemon juice. Mix well. Add the washed chicken pieces into the curd mixture and marinate for at least an hour. Heat a flat skillet and add dry red chilies, fenugreek seeds, cumin seeds, coriander seeds, cloves and peppercorns. Roast them over low heat until the aroma of the spices melts in the air.

Once the spices have cooled, add them to the blender jar along with the garlic paste, tamarind paste, and 1 tablespoon of water to form a smooth paste. stay aside. Next, heat some ghee in Kadi. Add curry leaves and let them crack. Add the marinated chicken and cook until it becomes al dente. Now, add the grilled ghee masala and bring everything together. Let it simmer until the ghee separates from the chicken and reaches the surface. Finally, add jaggery and salt. Once the jaggery is melted, mix well and check for seasoning.
