A heavenly meal can be quickly prepared in five minutes with the staple ingredients readily available in the season – radishes, carrots, green peppers, and ginger. Achar Winter Special Recipe: How to Make Achar Instant Mix:


1) radish – 2

2) carrots – 2

3) green pepper – 15-16

4) Chopped Ginger – 2 inches

5) Mustard seeds – 2 tablespoons

6) Yellow Mustard Seeds – 1 tbsp

7) Black pepper – 12 to 15

8) Cumin seeds – 1/2 tbsp

9) Fenugreek seeds – 1/2 tbsp

10) Coriander seeds – 1 tbsp

11) Anise seed – 2 tablespoons

12) Crimean seeds – 1/2 tbsp

13) Kashmiri Red Chilli Powder – 2 tbsp

14) Turmeric powder – 1/2 tbsp

15) Kalonji (Onion Seeds) – 1/2 tbsp

16) Mustard Oil – 1/2 cup

17) Asafoetida / hing – 1 tbsp

18) Salt to taste

19) White vinegar – 1 tbsp

How do you make instant mix?

Step 1: Gently wash and peel the radish and carrot. Wash the green pepper and wipe it dry. Now, remove the unwanted stem from the chilies as that could spoil the pickle. Also, it is completely optional to use ginger for this Ashar. You can put the same because ginger enhances the taste and is good during the winter season.

Step 2: Now, cut out the ingredients. However, follow the steps as shown in the video. The chef mentioned that you need to be very specific when it comes to cutting. Cut the radish and carrots into julienne. Cut the green pepper into two parts first. Divide them vertically from the center. Ginger also cut into a perfect julienne dessert.

Step 3: Now, make your own masala. For this, heat a frying pan over low heat. Now, roast the ingredients together. Take a grinding jar and mix the mixture together. Do not make a fine powder, but use a coarse mixture.

Step 4: Now, in the masala, put Kashmiri red chili powder, turmeric powder and kalonji. You can store this masala for some time. You can also use it to make Achari Mathri, Achari Parathy, Bharwa Payingan.

Step 5: Now, for the main pickle, heat up a Cady With some mustard oil in it. Add hing And we put all the chopped vegetables. Mix everything perfectly on low heat. Just cook it for 2-3 minutes. Do not overcook.

Step 6: Spread your flavor Ashar Masala from above. Put salt to your taste. In the end, do not forget to put white vinegar in it. Not only will this ingredient provide much-needed acidity to the pickle, but it will also act as a preservative. After the vinegar, cook for only 30 seconds and your instant pickle is ready.
